Do you use raw cashews?
We use 'commerically raw cashews'. What do we mean by this? Let us explain.
Cashews are encased in a caustic shell laced with urushiol (the oily toxin behind poison ivy's infamous itch). This natural armour renders cashews in their unshelled state not just inedible but hazardous, sparking rashes, blisters, or worse upon contact or ingestion.
To remove the shell make urushiol inert the cashews undergo minimal heat (steam or brief roasting) solely to neutralise the toxin, preserving their enzyme-rich, unroasted essence.
